TO-DAY'S DINNER.
(Specially written for Tnß DoMtmow.) SATURDAY. Rolled Steak au Pomnio do Tcrrc. Potatoes. Cauliflower. Baked Broad and Butter Pudding. Stewed Rhubarb. SUNDAY. Green Pea Soup. Roast Stuffed Veal. Potatoes. Asparagus. Gooseberry Tart. Baked Custard. Cream. SUPPER. Cold Veal and Ham. Salad. Banana Jelly. Cold Caramel Puddinge, ROLLED STEAK AU POMME DE TERRE. Take a largo and tender efceak, and scatter over it bits of butter, salt, and pepper, and a very large onion and 6ago (chopped finely). Spread over this a cushion of nicoly-mashod potatoes, Masoned with butter, and a very little milk. Roll up tho eteak with tho potatoes inside, and fasten tho edges and ends with skewers. Put the steak in a baking-tin with a largo cupful of gravy or brown stock, and lot it cook nlowly for about two hours, basting woll. It may bo put between two piedishes, and when cooked brushed over with a glazeof one teaspobnful of Licbig and one dessertspoonful water, and put back into the oven to brown about ten tninutee. Serve with a good gravy.
