WASTE DAIRY PRODUCTS.
AN INTERESTING EXPERIMENT. At the instance of the directors of the Nireaha Dairy Factory, (ho factor;.- manager is at present experimenting with the separation of whey, witli a view to ascertaining whether it would pay to set up special permanent innchftiery with the object of recovering the butter-fat that now practically goes to waste. Trials on a small scale have been made, and from eight gallons.of whey; taken from the top of th<> tank one and a half pounds of butter were recovered. "Whey taken from the bottom of the same tank gave no return of butter-fat. The directors have boon in communication with the Dairy Commissioner, and as a remit the latter will probably visit the district at. am early date, and give, facts and figures in respect to the profitableness of skimming ■trhey.
