TO-DAY'S DINNER.

(Specially written for Tub Dominion.) MONDAY. Kidney Soup. Spanish Steak. Potatoes. Mushed Turnips. Apple Tartlets. APPLE TARTLETS. Half pound apples, \ gill water, !- lemon (rind grated and juice strained). Jib. castor sugar, 2 sheets gelatine, Alb. shortcrust pastry, strawberry jam, rice (kept for baking purposes). Peel and core tho apples, and put them inlo a small stew-pan with tho water, sugar, grated lemon vind, and lemon juice. Simmer gently until tho apples are soft, and then rub them through a sieve. Gre.aso some small, deep patty-pans, and lint- them with the pastry. Put a small piece of greased paper and some rieo in each case to prevent their losing shape whilst baking. Bako them fov ten minutes in a moderate oven. Empty out tho rice, and put them back in the oven for five minutes longer. Turn out tho cases. Dissolve the gelatine in two tablespoonfuls of water, and strain it to the apple pulp. Put a, teaspoonful of strawberry jam in each caso, and fill them with tho applo mixture. Servo cold.
