TO-DAY'S DINNER.

(Specially written for The Dominion.) MONDAY. Pearl Barley Soup. Grilled Chops. Potato Chops. Stowed Onions. Eico Pudding. Stowed Apricots. PEAEL BAKLEI* SOUR 2oz. butter, 2oz. flour, 2 pints of whito stock, 2oz. pearl barley, i pint of cream, yolks of four eggs. Molt the butter in n saucepan and stir in the flour. When well mixed add tho stock, and when boiling tho pearl barley, Simmer for about 2hrs., and then pass through a hail' sieve. Return to tho stewpan. and simmer for tea minutes. Draw it oiT the firoi and stir in the yolks of the eggs, well beaten. After the eggs are in the soup it must not boil, or it will curdle. Season well. FOE TO-MORROW. Carrots for Soup. 2lb. Ox Kidneys. One Tin of Tomatoes. Celery. Suet. Treacle.
