TO-DAY'S DINNER.

(Specially written for The Dominion.) FRIDAY. Lettuce Soup. Fish Souffle. Cauliflower an Gratin. Mashed Potatoes. Lemon Honey Tarts. FISH SOUFFLE. Quarter-pound fish, either salt or fresh, i pint of cream or milk, tho whites of 3 eggs and yolk of 1 egg. Pepper and salt to taste. Chop tho fish finely with pepper and salt, if fresh fish is used. . Add ■ the yolk of the egg and 'the crsam. Beat all well together. Whip tho whites to a stiff froth, nnd stir lightly into the mixture just before cooking. Pour into a well-buttered mould; place a buttered paper on top. Steam for one hour.
