TO-DAY'S DINNER.
(Specially written for Tnis Dominion.) WEDNESDAY. Ox-tail and walnuts. Potatoes. Cabbage, Applo delight. APPLE DELIGHT. Half dozen cooking apples, ioz. sugar, i pint of water, a piece of lemon rind, a squeezo of lemon juice. Make syrup with the water, sugar, and lemon rind; have the apples peeled and cut into quarters, add them to tho syrup, and cook until tender. Remove the lemon rind and beat the applo to a pulp; add. 1 to 2oz. of castor sugar, and pour into a glass dish. Make a custard with 1 pint of milk, 1 dessertspoonful of cornflour, yolks of 3 eggs, and a piece of lemon rind for flavouring. When quite cool pour on to the apples; beat'whites of 3 eggs stiffly, then over a saucepan of boiling water; add 1 tablespoonful of castor sugar; heap roughly over the top of the custard, and sprinkle with pink sugar. FOR to-morrow: Half-pint of haricot beans. Stock. Two rabbits. Veal forcemeat. Cauliflower. Treacle. Suet.
