THE BY-PRODUCTS OF MILK.
'A NOTE ON THEIR VALUE. The following is an extract from a report .by the Agent-General'for Tasmania:— , ''My attention lias been directed to what appears to be the profitablo'treatmentof separated milk at the milkfactory, and' also whey from the cheese factory. From tlieso products lam informed-it is possible-, to obtain casein by: precipitation, worth about 30s. per cwt.. in; England. From the liquid remaining after tlio precipitation of, case--111, . by _ evaporation lactose is obtained, and it is worth at tlio present time 4os. per cwt. I am informed that the yield to the manufacturer after paying expenses is 3d. per gallon for the separator milk and whey. The plant to treat 500 gallons per day is estimated to.,cost about £200, and I understand a second-hand plant could be obtained for about, half that amount. The deniand for casein is said to bo good, and it would be.necessary if any of the factories were to take up this work and instal !i plant fdr that purpose—possibly I could pick out one of those emigrants who propose to go to Tasmania who would obtain the necessary instruction at his own cost if he were promised employment at such a factory."
