MATTERS OF INTEREST FROM FAR AND NEAR.
TO-DAY'S DINNER.
(Specially written for The Dominion'.) THURSDAY. Tickled pork and pease puddiss;. Potatoes. Cabbage. Apple trifle. APPLE TRIFLE. Four- penny sponge cakes, I pint of enstard, 3 whites of eggs red • currant jelly, G large apples, Goz. castor sugar, 1 lemon (rind grated, juice strained), chopped pistachio .nuts. Bake the apples slowly until tender, remove the skin and core iind rub the pulp through a hair sieve. Cut the sponge cakes in slices, spread some red currant jelly on each slice, and sprinkle on some grated lemon rind. Arrange the sponge cake-in tho bottom of a glnfs_ dish and cover them with custard. Whisk the whites to a stiff froth. Mix tho castor sugar and lemon juice with the apple. Add them to the whites of e«gs and whisk together for a fc.v _ minutes. Pile the mixture on top of the sponge cakes and custard :in a rough heap, and decorate with fancifully cut pieces of red currant jelly and chopped pistachio nuts.
