(Specially .written for The Dominion.) .WEDNESDAY. Croquettes. Grilled Chops. Mashed Potatoes. Cabbage. Apple and . Orange Fritters. APPLE AND ORANGE FRITTERS. Batter for fritters, flour, 1 egg, 1 teaspoonful of butter, 1 gill of tepid water. Put tlio, flour into a basin, beat the yolk of an egg with the water, make it into a smooth batter with the flour, add the butter (melted) and just before using the white of egg beaten stiff. Peel apples, core them, and cut them into slices about \ inch thick. Peel and slice tho oranges and remove the pips,, or break them into their own quarters. Sprinkle a little sugar over the apple and the orange. • Dip them into the batter, and then into some hot fat. Fry a golden brown colour. Drain on paper, servo on a hot 'dish with sugar sprinkled over them, , , FOR to-morrow: Two Rabbits. Veal Forcemeat. Cauliflower. Half Dozen Passion Frujt. One Lemon.
