MOISTURE IN BUTTER.
IS THE BREED OP THE COW A FACTOR? Mr. Vuaflart of the Agricultural Experiment Station in Arras, France, has been analysing butter for water winch is always in order, but lie has ,-t analysed butter made from the milk of two breeds of cows, those of Hainaut and of Maroillaise, whereby' he seems to imply a belief that the breed of the cows should havo any influence on tho water in tho butter. The result was that the former varied from ]2.i) jier cent (in January) to 13.3 per cent' (in August),, averaging l'i.G per cent; while the latter varied from 11.5 per cent (in April) to 17.3. per cent (in October),: averaging 13.17 per cent, thus seemingly confirming tho above theory. The butter was seemingly collected from various farms, but oven if bot'ii kinds of butter had been made under exactly the same conditions (says a writer in "Hoard's Dairyman") it would only have proved —what Everybody knows—that as for instance—tho churning temperature for Jersey cream and Holstein cream must be varied a little to get good results. It is worthy of notice by those who want to make criminals of makers of butter with more than 1G per cent of water that this was exceeded in summer, by French farmers in question, whereas tho analysis of butter from a creamery. where they had control of temperatures showed from 11.0 per cent to 18.G per cent in January nnd February and from 13.8 per cent ti 14.8 per cent in August and September indicating an intentional increase of the water percentage at a season when butter was dear while, the cooler conditions would naturally tend to;; decrease it.
