French beans. Peach tart.' Baked custard. ■ . . SUPPER.' Cold veal. Galantine of beef. Salad. Passion - fruit Russe. Jelly. ' : PASSION FRUIT RUSSE. Sponge, finger biscuits, half a,pint of cream, quarter ounce of gelatine, four tiblespoonfuls of niilk, one teaspoonful of lemon juice,, eight or . nine passion fruit, castor sugar to taste. . Lemon jolly and cherries to decorate the mould, fake a plain round tin mould, set some jelly arid cherries in tho bottom, and then' lino it with sponge finger biscuits, which must be trimmed and placed closo together. They must bo long enough to reach quite the. depth of tho mould. Whip tho cream, add tlict siigar and lemon juico and passion fruit to it. Dissolve the gelatine in the milk, and strain it to the cream. Fill the mould with this, and when quite set dip the top •of tho mould into hot water, turn out,- garnish with chopped jelly, and serve.
