TO-DAY'S DINNER.
(Specially .written for Tnis DOMINION.) MONDAY. Rissoles. Potatoes. ' Cauliflower. Chocolate pudding. CHOCOLATE PUDDING. Quarter nound of chocolate, Jib. sponge cake crumbs, Jib. butter, -J pint milk, 3 eggs, 3ozs. fine' sugar. Warm tho butter and milk together. When boiling stir in tho grated chocolate, and when quite dissolved odd'the cake crumbs. .Continue stirring over tho fir« until it thickens and leaves the side of the pan. Let it cool a little, add sugar and vanilla, then gradually the ire]l-beaten yolks. Whisk the whites stiff, add them to the mixture, place in a buttered mould, cover with buttered naper, and steam ouo hour. Serve, with tho following sauce.. SAI)CE. ■ Yolks of 2 eggs, sugar to.taste, J pint of milk. , Bring tho milk to, the boil. Beat the yolks and pour the milk over them, whisking well; sweeten and flavour, to taste., Return to the saucepan, and whisk over i the fire until it thickens. FOR TO-MORIiOW. Eight or nine pounds corned beef, suet, carrots, turnips, 1 pineapple, batter, fat for frying.
