TO-DAY'S DINNER.
(Specially written for Tnii Dominion.) ■ ■ ■■' .. THTJUSDA.Y. Timbales of cold meat. Potatoes. .Stewed celery. Marmalado pudding. Sweet melted butter. .-■ ■■ TIMBALES OF COLD MEAT. Half-pound of any kind of cold meat, 2 tablespoonl'uls breadcrumbs, J teaspconftil chopped onion, 2 teaspoonfuls chopped parsley, salt and pepper, 1 egg, ■ a little ■ milk. Thickly butter some small moulds, decorate them by pressing thinly-cut- rings of cooked macaroni 'all over the outside. -Minca the meat, mix it with the bread-, crumbs, onion, parsley, and f-easoning, and enough milk to mako it rather soft; beat up the ecir and add it to the mixture, then fill tho tins with it and steam gently about 1 hour. Turn over and pour tomato sauce over them. TOMATO SAUCE. One pound sliced tomatoes, 1 shalot (sliced), 1G peppercorns, a' small hunch of herbs, '1 tablespoonful of, vinegar, loz. butter, 1" blade of -mace. Put all these ingredients into a saucepan, put on the lid, simmer gently until quite tender; rub through a sieve; reason to taste; re-heat, and it is ready for use.. •: ; FOR TO-MORROW. . 1 schnapper. 1 tomato.
