TO-DAY'S DINNER.

(Specially written for Tnu Dominion.) TUESDAY. Steak and Kidney Pudding. Potatoes. .Vegetablo Marrow., Bice Pudding. Stewed Fruit. STEAK AND KIDNEY PUDDING. Two pounds steak, 2 sheep's kidneys, 1 dessertspoonful flour, 1 tenspoonful of salt, J leaspcoiiful of pepper, J lb. flour, Oozs. lard or, dripping. Gut. the steak into neat pieces. Skin the kidneys and cut them up small. Mix the flour, pepper and salt together and dip tho steak and kidney into the seasoned flour. Put it into a. pie-dish ancl. half fill, the dish with cold water. Mix the flour, drip-, pillg, and a pinch of salt in a basin. Cut tho dripping, into largo pieces in the flour. Make a well and mix to a stiff pasta with cold water. Turn oii to a noured board, roll out, fold in three and seal tho' edges. Repeat this until tho pastry has been rolled and folded four times in all. Then roll out the size, required for the pie. Cut off a strip J inch wide, and put it on the edge of tho dish. Cover with the rest of the pastry, decorate, brush over ■ with egg, and cook in a quick oven at first, then cook more slowly, altogether for 2 hours. FOE TO-MORROW. . Leg of Mutton.
