TO-DAY'S DINNER.

(Specially written for Tnß,Dominion.) SATURDAY.. Rolled loin of mutton. Potatoes. Baked tomatoes. . Bread and butter pudding, Stewed fruit. SUNDAY. Green pea soup. l Roast • lamb. Mint sauce. Potatoes. Cauliflower. Raspberry sponge.. SUPPER. "Crefesed brisket of beef. Salad. Apricot tart. Queen pudding. Cream. ' RASPBERRY SPONGE. ' Half ounce gelatine, one pint of milk, , three. tablespoons of raspberry jam, white of J one egg, a . little sugar, carmine. Dissolve the gelatine in half the milk over the fire, and'let it cool. Mix the jam and the rest of the milk together, and rub through a hair sieve.. Sweeten to. taste and colour with car-' mine or cochineal. .'Mix-with the gelatine and milk, and when beginning to set stir in the well-beaten white of egg. Pour into a. wet. mould 'and turn out when quite cold and set. Do not mix the jam and milk with the gelatine and ' milk while hot, or ifc may curdle. Half a pint of cream may be used instead of #11 milk.
