TO-DAY'S DINNER.

(Specially written for The Dominion.) TUESDAY. •Boiled neck of Mutton. C.ipcr pauce. Carrots.' Turnips. Queon pudding; QUEEN PUDDING. ■•'■ Four eggs, 1 pint of breadcrumbs, 1 pint of boiling milk, J pz. butter, grated rind of one lemon, sugar to taste, raspberry jam. ■ ■ . ....

Sweeten the milk nnd pour it boiling on the bread crumbs, add the lemon rind and butter. Lot it cool, then add the beaten yolks of the eggs. Butter a-pie-dish, put in the mixture, bako in a slow oven until set, but, not brown. Then spread over it a layer of jam. ■ 'Beat the. eggs to a firm froth. Mix 1 teaspoonful of sugar and .a. few .-drops of essence of lemon with them. Pile on the'pudding, sift over a little sugar,- and put in a very moderate oven until set or ,lightly coloured. '
