(Specially written for Thf. Dominion.) SATURDAY. Oyster soup. Veal cutlets and bacon. Mashed potatoes. Artichokes. Marmalade pudding. 'SUNDAY. Julienne soup. Roast sirloin of beef. Horseradish sauce. Yorkshire pudding. Potatoes. Cauliflower. Apricot tart. Cream. SUPPER. Cold beef. Tongue shape. Lettuce salad. Trifle. Applo meringue. OYSTER SOUP. One pint of fish stock, -J' pint of milk, 1J dozen oysters, loz. flour, loz. butter, 1 or two tablespoonsful of cream, calt, and corallino pepper." Scald tho oysters in their own liquor; beard them; and cut them in half. Boil tho . beards in tho stock for five minutes, then strain and. return to the saucepan,. Add tho, milk. Mix tho flour and bptter to a smooth paste, and. stir into tho soup. Bring to the boil; boil for five minutes, stirring all the time. Add tho cream, seasoning, and oysters, and serve.
