CONDENSED MILK INDUSTRY.

! Tho Hawkesbury Condensed Milk Company, of. Pitt Town,- New South Wales, entered into a'ne-w agreement with -suppliers for about 1000 gallons of milk per day, tho I price to bo 25 per cent, less than the SydI ney price of muk, -but never less than 5d., j nor more than 7d: per gallon. Such an agreement .in.New Zealand wonld bo remunerative to dairy . farmers. Twenty-five per cent, less than tho present Wellington price would be 6d. per gallon. It would tako about 2J gallons of milk to yield ono pound of butter-fat,- which,• at- lid. per pound, wonld return a' supplier to a dairy factory <t.4d. per gallon.(and the skimmed milk). On the other hand, a condensed milk- factory, on the Australian , terms, would pay 6d. per gallon (and no skimmed milk). This is better even than.cheese-making. '■' .:-. The returns may'be compared as follow:— For condensed, 1 gallon milk, 6d. For butter, 1 gallon milk, 4.4 d,; 1 gallon (nearly) skimmed milk, .5d.; total, say, 6d. : For ch'eeso, 1, gallon milk, at 13d. per Ib. butter fat, 5.2d.;'l gallon (nearly) whev ;.26d:; total, say, 51d. ~--.-■ - ' But after all what is whey or skimmed milk .really, worth? ;Farmers have their own ideas on_this point,.and.they vary widely. On tho estimates' of tho value of skimmed milk and whey' will depend the fanners' views as to the desirability of condensed milk factories.
