A CHEESE CHAMPION.

.;: \.-: MR. T. C. IRVING. Mr. .T.' C. Irving, manager of tho Greytown Co-operative Dairy Company, and winner oftho-Now Zealand. Shipping Company's Challenge Cup, for checse-niaking, at tho National Dairy Show, was bom'at Roslyn Uush, lnvcrcargill, in 1872. Ho commenced work as a chcesoniaker at tho Tapanui Fac-* tory, Southland, in. 1894, under tho management of Mr. TV 1\ Saxelby, at present manager of ; the, Belvedere Co-operative Dairy Company. Subsequently, Mr. Irving was engaged at the Taratahi factory, after which ho dropped out of tho business for five years, and embarked in mercantile pursuits in Southland. Ho resumed checscmaking work seven' seasons: ago, when ho again entered tho.Taratahi Factor}', and ho was then successively manager of tho Ohiaruho Proprietary Factory (owned by Mr. H. R. Bunny), and tho Maugaramaraina, and Greytown Co-operative Cheeso Factories. Mr. Irving has entered cheeso of his own molting oii eight different occasions, with the following results:—Ahiaruho, first/ liigh'y coramonded, and once unplaced; Mangarauj.wina, iirst at Maatortoaj (Jreytown, firet dt jdoatortao, .thiri &t Outertoo, s*m

cheese - being awarded first, equal with Kcatherston on tho London judging; first, New' Zealand Shipping Company's Challenge Cup. gold medal,, and fourth at l'almerston North. Apart,from his business, Mr. Irving is well-known-as-'a gun and rino shot. In 1900 he won the gun championship of Southland. . '
