JUDGES' REMARKS. Tho Dairy Commissioner and tho other judges woro asked for an expression of opinion after the judging was concluded. Thoy stated that the butter opened up well, and showed clean finish throughout the ptaced lots. Somo of tho exhibits w&re very close indeed, and competition v/ns especially keen whore tho'butter was made undprthe most favourable In tho opinion of tho judges, competition in these classes was keener than at any previous show held in tho North Island, which indicated that factory managers wero working on uniform linps. In some cases the judges found it almost impossible to dispriminato between some of tho entries, and in ono case had to divido tho first two awards. As compared with' the show in Auckland two years ago, thero was an improvement right through the butter. Tho class forbuttor kept under Home-trade dittons was t, most interostiag i 1 ♦ e
condition of the butter was a very good examplo of how butter opened up in London, and tho prize-winning butters had retained their flavour exceedingly well. Somo of tho unplaced ones showed defects which would bo pointed out to tho makers, but on the whole the quality was good. Tho competition in cheese, stated the judges, was just as keen as in butter, although tho entries wore not so large. Quality all round was of a fairly high standard, tho prize-winning exhibits being very fine indeed, and the judges- were very pleased to find that a big improvement had been mado in tho quality of the cheese exhibited by the Auckland factories as compared with that shown two years ago. While not so uniform as tho exhibits from older cheese-making districts, Bio Auckland cheeso showed(substantial that tho Auckland 'factories wore making good progress in the three open classes for cheese. Some very fino exhibits had como forward, sound in flavour, and of fine close body and neat finish. The export butter was judged by Messrs. Johnston (grader at New Plymouth), Fulton, (assistant' grader at Auckland), and Shirley (dairy instructor), while Mr. D. Cuddio (Dairy Commissioner) was also consulted in each case. The cheese was handled by Mr. Cuddio and by Mr. W. M. Singleton (cheeso instructor). The Dairymen's Association class in butter was judged by Messrs. D. J. M'Gowan, A. Scobie, A. Beangc, and W. C. Dison. THE PREMIER'S CONGRATULATIONS. Sir Joseph Ward sent the following telegram to the President of the Auckland 'A. and 1 , .
