SUPPEK. Cold Veal. .■ Mayonnaise <of Lobster. Stowed • Pears, with Vanilla Cream. Eico Shape. STEWED PEARS .WITH' VANILLA CREAM. Pool the stewing pears and put thom in.the stewp'an with enough cold :water to cover them, add 12oz. of 'stigM to.each quart of water, a littlo picco of stick cinnamon, a littlo lemon peel, and a few drops fit • carmine. Cook for 2i hoars, gently simmering, take them up, and lot them cool; reduce the syrup in which they wore cooked to the consistency of single cream. When the pears are cold, stamp out the cores with a vegetable cutter, and fill up tho centros with .'stiffly-whipped 'cream, flavoured with vanilla and sweetened, using a forcing bag, and rose pipe Vfor . the purpose; sprinkle them . with Unely-snredded blanched sweet almonds or pistachios; dish up. and pour the syrup round them. ;. . \"V. ■ ■ . v.
