In somo tests witli ycombinetl' churn and butter-worker,.. Mr. JM".'-- J. - Nielsen,', a Danish investigator, found that-when-the churn was run at>32 revolutions per minute, there was too much' fat j left;'in'the buttormilk, and as soon as tho speed was reduced.to 28, tho buttermilk was normal: ; Ho lias also, tested tho. effect; of overcrowding the '■' churn as against making two churnings. • Thus he found that 12 churnings' with ' 7501b of cream'gave 6.93 per cent, fat in-the solids of the buttermilk, whereas 12 churnings with 23001b. of cream gave i 7.86 per cent., and again .13 churnings. with 10501b. of cream gave -5.69 per cent, 'fat in tho solids of the buttermilk and 14 churniiigs with 26001b. 1 of cream gavo 9.7 per cent. , : .
