FAT MEAT.
What,is the uso of nuking cattle and sheep so fat? (writes Primnso .tf'Connell, in "The Dairy"). A fat arimal when alivo looks very nice, of course, but,when killed and the carcass cut across so ls to see the "edge" of the meat, ono realises what a huge waste and a mistakui idea, of things is there. When ono sees tho section of a sheep with two inches ,of fat or a bullock with four inches cf tallow, on the. flesh, it is time to ask what is tho,, Knse.pfall this? Nobody could eat meat oi this,.kind, and when one goes into a butcher's shop to make purchases tho butcher will cut, bit. some of this fat and throw it into his tallow-vat without waiting for the customer to ask him to do it. It is, of cqurst, tho object of every feeder to get his anhials into a proper state of plunipness, but it cau easily bo overdone, and it is satisfactory to record that butchers are not so keen to get excessively fat beasts as they ence were. During last summer the write; was requested by tho butcher who was biyinp; his eheep not to make them so fat: to take, the cako off them so as actually to reduce them a little. This is a lesson he iviU follow next year with benefit to his pirso—less cako and less time will make then fit to kill. It is satisfactory to note that the leanest ammals won tho prizes in the sarcass competitions, so that tho taste in this lino is improving, but all tho samo when those animals were alive iho fattest ones would hare stood tho besff chance of .yinuiiig. .
