BANANA CONFECTIONS.
One of the latest developments in the confectioner s art is de-icribed in a consular report from Puerto Plata. It is a sweetmeat made m feanto Domingo, from large, thoroughly ripe bananas. The skins are removed, and the fruit cut into thin slices about a quarter of an inch in thickness. These pieces are sprinkled with fine or powdered sugar, and are placed in the sun, laid out on boards, or shallow, trays. As the fruit dries, it is turned over several times, and each time is dusted with sugar. In a few days it becomes suiciently dry, and tho result is Jα crystallised conserve delightful to tho taste.
