Soak the gelatine in the water, and then dissoho it over the fire, and set it aside to cool a little, Press out the juico of the lemon, and havo it ready, and also the sugar. Put the whites of eggs into a basin, and beat them up quito stiffly, then add a little gelatine, a little lemon, and a little sugar. Continue this until all the gelatine, lemon, and sugar are used up. 'Whisk until it becomes the consistency of sponge. Put it lightly in a glass'dish or set it in a ohma mould. FOE TO-MORROW. Shoulder of lanib, voal stuffing, celery, 1 pint of peach puree, gelatine, half-pint of cream, 3 eggs.
