Make the mixture about the samo consistency as a pastry dough. Turn it out 011 to a floured board, and shape into triangles Jin. thick and-about 2Jin. Jong. Bend the most pointed end of the triangle to make the cutlet shape. Egg and crumb them, and fry them in hot fat. Put a piece of macaroni or a stalk of parsley in to represent the bone of thccutlet. Serve with gravy and potato chips and parsley. FOR TO-MOItROW. Roasting beef, potatoes, maraconi soup, bread and, butter pudding. •
