[Specially Written for The Dominion.] PRACTICAL SUGGESTIONS BY AN EXPERT. FRIDAY. ' ; Purds of Haricot Beans. Potato Cutlets. Steamed-Fish. Parsley Sauce. "Brown ■ Sauce.-" Chip Potatoes.. Vegetable Marrow. Stewed Rhubarb. . Boiled Kice. K' - ~- POTATO CUTLETS. Mix together equal quantities of finely minced cold meat and mashed potato. To these add salt, pepper, chopped parsley, thyme, and a few drops of lemon essence. Moisten these ingredients with milk, gravy, or a littlo beaten egg. Make the mixture about the samo consistency as a pastry dough. Turn it out 011 to a floured board, and shape into triangles Jin. thick and-about 2Jin. Jong. Bend the most pointed end of the triangle to make the cutlet shape. Egg and crumb them, and fry them in hot fat. Put a piece of macaroni or a stalk of parsley in to represent the bone of thccutlet. Serve with gravy and potato chips and parsley. FOR TO-MOItROW. Roasting beef, potatoes, maraconi soup, bread and, butter pudding. •
