V.: QUAKER APPLE CHARLOTTE. Method.—Put six apples, two tablespoons of ' butter,' and some sugar into a saucepan; add a tablespoon of water and-the juioe and grated rind,of a lemon. Stew them until .quite soft. Butter a piedish and coat it with breadcrumbs. Pill the'piedish with layers of apple and breadcrumbs. 'Bake, for three-quarters of an hour slowly. -Serve it in the dish or turned out : .with sugar oyer■ it. ; .. . FOR TO-MORROW. Soak haricot beans for: soup, also prepare vegetables,: etc.,"for this soup* minced, cooked ' meat; and mashed . potatoes, one egg, fat . for frying, thyme, and parsley, brown-sauce or gravy (if possible),' chip potatoes, steamed fish, one pint and a half of milk, rhubarb and rice.
