'■ : ' 1 Ingredients.—Ono pint of very, nicely flavoured red jelly, If. cupfuls. of whipped oroam, ioz. of sheet gelatine, loz.; of each ofthe following: Preserved cherries, angelica, preserved ginger, and preserved apricot. , Method.—Set the jelly in the bottom of a, mould, arid, if there is any overset it so that there will be jelly, to chop and garnish the dish with when it is served.' The. fruits are chopped up, added to the cream with enough sugar to flavour.it. Melt thj gelatine in a few tablespoonfuls,of water, and add it. Then put the. mixture into the mould and let it set. If liked, more cream may bo used, and it is then whipped and put through an icing pipe to furtne'r garnish-tho dish.
