TARATAHI'S ADVANTAGES.

. The' Taratahi' Cheese Factory opened its r' season .on Monday, August 24 (writes_"> our 1. \ Wairarapa correspondent); The milk* re- ' ceived 'was just on 300' gallons, against 200 /gallons recorded on the first day of the 1907 '■ season. It is interesting to note that at the \ I beginning' of :• the 1907 season, the factory ■ . Was open only on alternate ,days, while this : -3 •; year the supply will .be daily from the comot ■ mencement. It is a well-known fact that .■l', the Taratahi. district is exceedingly well 0. adapted for dairying. The pastures are sweet and clean, and not at all wet. One of the reasons, advanced for the forwardness of the !' Taratahi milk supply is that a. large numbor of the farmers make a practice of nf 'C proper winter feed for their stock. The reGir'i suit is that their cows are in excellent condi■•4;. tionio begin the season, and their owners can t • congratulate themselves .on the enterprise ' and industry which is their financial gain. ' -The Taratahi Dairy Company provides a . strong argument in 'favour of the' use of coal as fuel for steam power in preference . to wood. The saving last season on the fuel biir.was .50 per cent, through using coal, the ' items reading £120 per year previously for . wood and £60 last season for coal. It is f worthy of notice, however, that this satisfactory result was brought about largely owing . to wise management regarding the manipula- .'' tion of the coal shovel and the slicing knife. ■ If otherwise, the cost of the coal might have been much greater. It is evident, however, that the general use of coal in the Wairarapa dairy factories will have to como very soon ; the cost of wood and the difßculty of obtaining that article almost prohibiting its use.
