PASTRYCOOKS' PRACTICES. Poultry breeders and others interested in puro food for stock waited on tho Now South Wales 'Under-Secretary for Agriculture on August 6, in tho absence of the Minister, on account of illness, and urged that there should bo legislation to govern tho sale of adulterated foods. Horrifying stories wero told of the quality of some of tho eggs which went into consumption. Tho Secretary was incredulous. He could not believo that pastry cooks could use such stuff and still be able to sell their goods. Did anyone actually know of his own knowledge that these eggs were put into cakes? Several members of tho deputation had no doubt of it. Ono had seen for himself, and another repeated what ho had been told at a riioeting. The original narrator had served his apprenticeship to a pastry cook, and ho described the modus operandi. Members of the deputation also stated that tho analysis of samples of pollard disclosed quantities of dirt, sticks and floor sweepings ground into powder. Chaff, adultered with decayed straw, and bran that was half saw dust, wero amongst tho complaints laid before the Under-Sccretary. The latter favoured a separate short measure 911 the linos of the Fertiliser Adulteration Bill, and promised to lay tho representations beforo tho Minister.
