(Specially Written for The Dominion.) PRACTICAL SUGGESTIONS BY AN EXPERT SATURDAY. Fish Soup. Beef Steak and Kidney. Pudding. Potatoes; Stewed Figs and Rice. SUNDAY. Dinner. Roast Veal, Bacon, Baked Potatoes, French Carrots, Plum-Pudding. Chocolate Blanc Mange. Ox Tongue, Salad. Jam Tartlets. Welsh rare-bit FISH SOUP. Ingredients for a brown fish soup—3lb. of fish or fish bones and trimmings, 2oz. of dripping,'herbs, 1 onion, 1 leek, 3 sticks of celery, 1 small carrot, 12 peppercorns, 2oz. .rice, 3 : quarts of water, 3oz. of flour. (Soup sufficient E tor about 8 people.) , i Chop the vegetables and brown them and tho flour by flying them in a saucepan with the dripping. Gut. up the fish and add it and the water to the. saucepan. Add tlio rest of the ingredients and boil for about an hour. Put two oz. of boiled rice into the soup tureen and .a little chopped parsley. Strain tho soup an to those and serve. - CHOCOLATE BLANC MANGE.. 4 When making this great caro should bo taken to make suro that tho cornflour is ivoll cooked. ( Too often a. cornflour blano mango will bo < spoilt by tho" tasto of uncooked cornflour.
