Method.—Rub ■ a pound of hot potatoes through a siove, and • add t othora 2oz. of melted butter. Add the. grated rind and juico of 2 lemons, also soz. of sugar, 2 beaten eggs, and a little salt. Stir these ingredients well and .put them, into a buttered pie-dish-or tin. Bake them in a moderate oven for at least thirty 1 minutes, and tlien turn . thom out on to a dish, sprinkle with sugar, and serve very hot. If those you are cooking for are particularly fond of meringue, tho whites of egg may be kept back, and water added in their ■ place; Tho whites are then beaten to a very stiff froth, placed on the pudding after it is cooked, and sprinkled with 6ugar. The pudding is then put back into tho ovon for firo or ten minutes to set the , meringue. ' " FOR TO-MORROW.
