PRESERVATIVE IN BUTTER.
Sir,—l notice in this morning's issue the samo old cross-purpose, gags and counter gags, about boracic acid, and tho samo old beating about the bush without getting into it. If. "fixed. quantities" could bo established now and again in over so small degree in this question a solution would be arrived at somo time prior to the Day of Judgment, and to that end I can offer you two to start with, viz., tho cumulative power of boracic acid and its power over dirt. Any dose given will rovcal no traco after 12 days, that being tho maximum result and throe days tho minimum. , Boracic acid has no power ovor dirt in regard to its germ-content. Home separation and tho open churn ore absolute conditions in tho production of buttey that will keep without preservative, and it is useloss to argue till those obstacles are dealt with. On the other hand, it is very silly to put calculable percentages of boracic acid in uutter. It l has 110 effect on the butter, only oh tho matter which affects tho butter; which,' worked, out properly, will show that boraeio acid applied to butter-making with brains will leave .very .-little for tho analyst to find.—l am, etc., / ~ .
