RHUBARB AND GINGER JELLY. Cut a pound of rhubarb into pieces about an Inch long, and bake it with lemon, sugar, and ginger flavouring,. until it is soft, but not broken. Dissolvo'an ounce .of 'gelatine in one / cup and a half of water over a slow fire.. Add the rhubarb. and the juice of a lemon to : it. Then, set this in a mould in the usual way. Garnish the dish with preserved ginger, and, if liked, whipped cream as well.
