Savoury Sandwiches. , ' GOLDEN TARTLETS. • Three pounds of carrots, stowed until quite tender, and then rubbed through a sieve. . Grato the rind from sis,lemons, and add it and tho juice of the lemons, and 31b. sugar, and 2oz. of sliced almonds.. Boil this together for about one hour. This mixture will- keep for It-long time to use for tarts. -Line some patty pans with thin pastry, put some of the above mixture on to thern, as you would if making jam tartlets; bake in a quick, oven. RHUBARB AND GINGER JELLY. Cut a pound of rhubarb into pieces about an Inch long, and bake it with lemon, sugar, and ginger flavouring,. until it is soft, but not broken. Dissolvo'an ounce .of 'gelatine in one / cup and a half of water over a slow fire.. Add the rhubarb. and the juice of a lemon to : it. Then, set this in a mould in the usual way. Garnish the dish with preserved ginger, and, if liked, whipped cream as well.
