WHY LEURA BUTTER CONTAINS PRESERVATIVE. In a Dominion interview of April 25, Mr. • S. S. Cameron, the Victorian Dairy Supervisor and Chief Veterinarian,, in advocating the prohibition of preservative from butter instanced the Camperdown ' (Victoria) Factory's Loura brand of butter as a proof of successful exporting without preservative. In order to verify the, statement, tho mana§er of the Camperdown Factory, Mr. John . Weatherhead, was communicated . with, and his reply has just arrived!- His lettor is as follows:— ' 1 'Camperdown Butter, and Cheese Factory Co., Limited., . "Camperdown, "Juno i. I do not use preservative in tho 'Loura' butter packed for sale in Australia, but for. London\ I use Jth pjr cent., simply because, so far as I know, tlio use of it is general, and I am hot prepared,, to take any , extra risk. At the same : time, I am certain that .butter can be landed in London from New Zealand or here in perfect condition without any preservative of : any kind, always provided it, is properly made and properly refrigerated.. Eefrigera- , tion is what we ought to look to, to keep our buttery not preservatives, which at best are only a cloak for.,dirt ; and carelessness.
