During ilie season 1906-7, ,-I iised no preservative whatever in my, export butter," (.with : .tho result that my butter opened up very . badly on the. London market,' the agents,'.saying /thiat it": developed \ a peculiar ;-, flavour after defrosting. This, of. course, affected tile, price to the extent of about 2s. per cwt.; ori; ruling market prices for first grades, arid sometimes as. high as 4s.' grades.' : . ■During this present" season' I 'have'used about: i, per . cent, of '.preservative in' all -export'butt'e^; I ,ahd' this' ket has proved .that last year's trouble, was dueVentirply'to' the want of 'preservative; in ithe 'Butter. Our London agents'report, that tlie- butter is opening up well this and the prices right through the season liavo been equal 'to the-ruling market prices'. •' "In conclusion I would like to say that some of the butter s?nt Homo jvithbut preservative was : mado from pasteurised-cream, and although this opened-up. slightly batter the result was not good enoughyto warrant a continuance without preservative."
