v A BEGINNING. FORTY-THREE PREMISES EXAMINED. The Health Department's milk regulations, which will-be tho basis of tho City Council's by-laws, havo recently been put into praetical operation in the shape of an inspection of' the niilk : shops'and'milk stores of the city. Tho final decision as to the issue of licenses rests with the : City Council. There are two classes of premises in which-milk may be doposited. One is an.ordinary milk shop or dairy shop, : where milk may be kept in the shop itself • for sale. The other is a milk store,'whero '""runners" may 'store their milk pending delivery. Under the regulations, 'milk- forsale may be kept in thoso places, and in no others. ' Dr. Frengley told a • Dominion representa- ■ tive yesterday that he was " reasonably well satisfied," with . ;the provisions made for storing milk in those places where licenses have been approved. There are two other branches of the . milk-selling trade still to be dealt withj namely, the conveyance from ytrain ' to';:'milk :"store,' : and the 'distribution ' from : store to consumers. ' Apparently,' the" requirements for m'illt stores are not complicated. The chief things ' are a cold, clean,,- isolated store, in whichto keep the .milk, '■ arid, a separate compart-' ment; in which' the tins may' be' washed with hot water. .-:The existence of'heatitig appliances the cold store itself is regarded with ' disfavour. In dairy shops the use of ico to keep-the milk cold is rccopimended.
