CHEESE TOO CREEN.
In his annual, report; Mr. J. R. Scott, secretary of the National Dairy, Association of the South Island, says:—' "The quality of our cheese is not so favourably reported oil generally as'.our butter: ' Doubtless the market has been Iras buoyant, and-rather, against forward buyers, aud'so complaints are more general. But tliera is no doubt there has been 'room for coit'piaint in many eases. Very much' of the fault coiuplaiiied of is due to 'snipping cheese tjo green, and worse-still, in casing it too green; also,: of course, to inferior'milk sup-, plied .'to factories. Mr. Singleton,. Acting Dairy- Commissioner, says he had seen- these faults-manifested in shipments, of cheese be had examined when in London, and at our Invercargill conference in February warned factories of the serious; consequences ;of this p) acl ice of shipping green cheese. The Canadian Commissioner, Mr. Ruddick, in his last ' report, also. -warns Canadian 'cheesemakers- ; against', casing and shipping chees 5 too green, and' speaks strongly of its evil effects. At Invercargill Conference members passed a resolution not to case cheese under 10 days. 'This is short enough. '.It should never be sent to a shipping port under threo weeks: - ; ■ ~ - - "New. Zealand cheese as yet,.unlike New Zealand butter, does not hold pride of-place in-London market quotations. Canadian ms sold at 2s. to 3s. more generally. With oare and attention thero is no reason why-New Zealand cheese should ,-not at least equal Canadian, and this is one of the many things that'it'behoves.'suppliers and factory men to bring about. It is a matter within their power, and in theirs only."
