WHAT THE OLD COW SAID.
The old cow walked by the dairy shed • , And she said in her ruminant way: "I'm feeling about as iino as silk, , But I'd like a drink of my own good milk," . - ■ t And looking around sho presently saw , . A pail that was standing boside the door. ] ' ' It was buttermilk, about two days old, ■ But the aged bovine hadn't been told. ( So sho only remarked, "It's mean to bilk \ An industrious cow of her own good i . milk." And she took a drink and she looked sur- 1 prised— •• And she walked away, and' that cow ! surmised — < . Sho surmised I about half way down the J lano — ' And she said with astonishment mixed 1 with pain: J "To judge by the flavour of that there • milk, _ 1 I can't bo feeling as fine as silk; : I must bd bilious, I'll bet a hat, When I get to giving down milk like that." —"Dakota Farmor." _2
BUTTER WITHOUT'BORAX. . IS PASTEURISATION ENOUCH? A week ago wo pointed out that if thft threatened prohibition of . preservatives "in butter was enforced in Britain, the chief hope of this butter industry in this country lay m pasteurisation., This statement • was published a week ago, and! we liavo since looked in rain for somebody with" an intimate knowledge of the butter industry'-to suggest another remedy. . The'absence of any such suggestion appears unfortunately to confirm the. view we at first expressed; .'and in the meantime; the Government experts'/of Australia have also expressed anxiety as'to , the results; ; Several gentlemen with good technical knowledge;, however, have discussed tho subject. . 1 Borax or Cleanliness? Speaking 'of pasteurisation results .generally, this gentleman; said that a. difficulty • iii the past had been that pasteurisation reduced/tho overrun. So there is both quality and quantity attacked' by. the problem of t-s----porting butter without borax. Wo do hot doubt, that some good way. out of tho difficulty—when it arises—will bo found by our persevering New Zealanders; but it will serve no i good purpose , toy shut our eyes to the fact that at present that way lias not yet been quito found out.
