HOW TO DETECT PRESERVED ECCS.
While tho shell of an egg preserved in lime is rough and thin (says a writer in "Town and Country Life") the shell of one which iias been kept in water-glass is smooth. Another sign of a preserved egg is its clean look. Unless the shell of a water-glass egg, .or.oven a lime egg, has been punctured with a needle, it will probably crack in boiling, tho explosion being due to tho porous shell having been rendered air-tight by the presorvationi •! When an egg preserved in lime or water-glass is boiled, there .ire a number of, little holes in the white liko tho holes in a loaf ol bread. When such an egg is poached or friend tho, white bubbles up as if it'were fe.rmented. and i;!:e'yolk separates entirely from it. A presorved egg will not whip.
