Sir, —13y tho proposed dairy school having its own herd of cattle from which to draw its own supplies for butter tests n very important point is capable of solution, ana that is whether Denmark can .for all time load all other countries in the quality of its butter, and securo a higher commercial value for this product. If by having the whole management under the control of Government 1 experts through all tho stages of dairy work, un article equal to tho Danish can b« put on the market, then wo can clearly see whore our weak' point, lies under our present conditions. Denmark's dairymen are all schooled alike, from their' infancy. I may sny, in tho strictest observance of cleanliness in ail stages and iij all the tactics that conduco to tho manufacture of butter of unsurpassed excellence. I-feel assured that our suppliers have not boon brought up under such rigid disciplino, and that it will bo found in this stago of dairy work and not in tho factories that tho chief faults lie.
