Some/three years ago it was considered .in Viotoria that the largo quantities of -apples, such as. .windfalls,' which go to- wasto overy season or are given to pigs, could be turned into a marketable: product in tho form or cider. With this object a complete cider mill and appliances were importod hy tho Agi icultural Department, and sent to vauoia Country: shows,, where the' operation ;of,'; making was demonstrated. ' Tho mill was also lent .to several persons who aosiiod tho industry on a commercial basis, lhcst persons placed their products on thenMrkofc with such satisfactory results thrst not only havo several of them' sinco purchased' nulla for themselves and made much larger;'quarir tities'of cider, but others liavo been induced' •to. enter the- field.: : During the' past /season large quantities of cider nave been' /made, and, one result is that the : orcliardist liable to grade his fruit for-export and; gewm market purposes to a much higher standard.
