TO TEST FLOUR.
If .flour is white with a yellowish strawcolour it is good, while if 'it lias ' a bluish cast, or black specks in, it is the ppposito. Flour can only be tested by its' adhesiveness —wet and knead a little, of it botwfccn the fingers. If it works soft and sticky it is poor. , If a little flour is thrown against; a dry, smooth surface and it falls like powder, •:you niay know that it is _not of the best quality. If flour squeezed in the hand retains the shape given it when the hand is relaxed it is a good sign, . ' .
