A MODEL CHEESE FACTORY.
The Featherston Cheese Factory, of which Mr. J. Adamson, a gold medallist at the last Wairarapa show, is manager, is one of tho finest factories in the Dominion. Tho concern, will count very high for.cleanliness and smoothness of working. Mr.' Adamson works on rather unusual lines. Ho has a contract with the directors to manufacture tho cheeso and put it on the railway for 4s. per 1001b. Those, who might fear, that a manager under contract might hurry his work, with disastrous effects on. the cheese, will bo surprised to learn that, besides winning a gold medal at Carterton, winning in two-classes with two exhibits, Mr. Adamson, for tho 115 tons of cheeso already shipped, away this season, has averaged a grade , 'of fully 91 points. A sum of £1200 lias recently been spent in enlarging tho premises and putting in two additional vats. Last year 304 tons of cheese wore shipped away, and tho amount this year will probably reach t0 , 350 tops. When a Do.minion representative visited tho factory recently, an array \>( 350 cases of cheese wero being got ready for shipment to-morrow, and, , in addition, there were 25 tons, (or about 700 cheeses): in,the curing rooms. If'everyone of these cheeses develops the delicious flavour which characterises the ripe cheeso' which' favoured visitors are permitted to sample, then there will be no disappointment felt at the London end another day. '
