Ginger puling-. instead of serving the neck of mutton boiled b the usual way, it makes a pleasant change to boil it until it is quite tender, and thonegg and crumb it, and bake it for about half an hour. It should then be served with, a, brown sauce, made in the following way:— 1 Hoat a tables'poonfnl of dripping in a saucepan, and then add to, it a cup full of chopped onion, and any other chopped or sliced vegetables. When these are a golden brown, colour '• add to them-a large ' tablespoonful of flour.Let this fry very slowly until it'is very brown, and then add j to'it a pint of stock or water, - arid let the gravy cook for about half an hour; strain: it and serve. It should have, of course,' '.. salt and pepper, and sometimes a few jrrains - of sugar are. an improvement. The amateur is likely to fail in'making the sauce by cooking it too quickly before tho liquid is added to it.
