' PRACTICAL SUGGESTIONS BY AN „ 'EXPERT; ' (Specially Written for The Dominion.) , TUESDAY. ' Bhin, of Beef Soup,. Boiled Leg, of Mutton, Caper Sauce, Mashed Turnips, Potatoes. ' Jam Turnovers: - SHIN OF BEEF SO.UP. ■Ingredients.-31b. shin of- beef, 1 carrots,■ 1 turnip, 1 mion, celery. Method.—Skim the fat from tho stewed shin of beef, atnl lieat about' a tablcspoonful'of it into. a: saucepan, and.then frv it in about G tablespoonfuls of chopped ' onion. Then add about 2 teaspoonfnls of flour, and' then* tho shin of beef and the. water it was cooked in. Next cut up the vegetables; cutting up about two cupfuls of mixed vegetables into dice, and putting them on one side until wanted. The rest of the vegetables put into the soup. Also , add salt, popper,, and parsley. Let this boil until the vegetables aro quite cooked, then strain it, and add the vegetables that were cut into-dice. Boil the soup for about., half an .hour; add about a tablespoonful of sago, boil about ten minutes, and: serve. Soups .that' are- flavoured with vegetables often require a pinch of sugar to'improve their flavour. ' > ' . . FOE TO-MORROW. ' ■ .Ingredients.—Keep the water the mutton was boiled in, J jib. of scrag end of neck of mutton, pearl-barley ol- rice, carrot, turnip, leek, pars-lay,-vegetable marrow, beef for roasting, horseradish, potatoes, 1} pints' milk, ■ sago, ■ pineapple, -2 eggs.
