PICNIC FARE.
A picnic on a large scale is rarely manageable, unless a fow self-sacrificing mortals, as in the case of school pionics, mean to devote themselves exclusively : to its conduct. The advent of the paper plate has done much 10 lighten the burdoii of .the judicious picnicker. The folding cup is another item that adds £o her gaiety, wililo the paper linger napkin simplifies things, still. further. Sandwiches, once regarded as 1 essential at a picnic, cte inand much , time and trouble in their preparation. Cutlets, chicken and ham, or the inie, each "portion'-. wraped first in grease-proof paper and then in a Japaneso napkin, aro worthy substitutes. Salads of all sorts, lettuce, beetroot, potato, beans, and fruit, aro all both porta bio and acceptable. Hard boiled eggs, cheese and .biscuits are invariably popular.' . Salt, pepper, mayonnaise dressing and cream can travel safely in small bottles. Lemon barley water is an excellent supplement', to tea. To the casual observer it would seem that there is an excellent outlet for ,fche. onergios of the "occasional" worker ; in connection with tho supply of pnnic fare.. Potato' Pie. —Boil two largo potatoes, and, after draining, .add half a cupful of butter, mash and boat thoroughly, then add one cupful and;' a half of stigar and three eggs beaten togethor very thoroughly. Thin with & quarter of a cupful of milk or a little more if necessary. Season with orange or vanilla and bako liko a cuStard pie with only ono crust.•
