In doing this be careful to pull the crust a little away from the centre; or tho. edges, which are thinner, will be cooked before the middle of the tart. Then Bpread the tart with,raspberry or some other, jam.' l Melt about a tablespoonful of butter in a saucepan, and add a ,tableapoonfnl of sugar and a beaten egg to it. Mix'these ingredients woll together without cooking them, and then spread them ; on top of the jam.- Next sprinkle , over this some chopped almonds, andj if liked, pljice:, tome, strips, of-pastry across, the tart. ; ' Everything should be ready before the warm mixture is poured on to the crust, as if it is allowed to stand on it there is a danger that the pastry will-become heavy., Bake the tart in a very brisk oven until it is brown underneath. This can be' told by lifting up the edge of the/tart with a knife. FOR. TO-MORROW. .
