CHEESE-MAKERS SCARCE.

It is stated (writes our Wairarapa correspondent) that there is a scarcity of cheesemakers in tho Dominion this season. The reason is said to be the opening up\of new factories, especially in Taranaki, where one farmer alone, Mr. Joll, has six establishments. It practically takes four seasons for an apprentice to become a proficient chcescmaker, although somo finish in three years. It is difficult to understand that thoro should bo a scarcity of makers, and one wonders where do they all drift to.
