HJACTICAL SUGGESTIONS BY AN ~.-'" . ' ~- EXPERT. (Speoially Written for The Dominios.) f WEDNESDAY. ■ Boiled Neck of Mutton, Parsley Sauce, Cabbage, Potatoes. Baked Fish. , French Pancakes. BAKED FISH. Method.—Trim and thoroughly clean a boiling fish. Then make a stuffing' with breadcrntnbs, salt, popper, chopped thyme and parsley,'a little milk or egg to moisten it. Sometimes a few drops of lemon essence are an improvement. Sew this stuffing inside tho fish, and tic the fish into a neat shape. Put it on a buttered baking-tin with a little butter over it. Then cover it with a greased paper, and bake it slowly, basting occasionally, until the fish is cooked. It takes about ten minutes to the lb. and'; ten, minutes over. Tho contents o? the baking-tin aro in dishing poured round the fish. That is the reason butter (about 20z.) is used instead of dripping for basting. Some people prefer to dust flour over the fish before baking it.. Servo it garnished.'with slices of- lemon, .chopped parsley, and a dessertspoonful ; of browned breadcrumbs sprinkled over it.
